Ingredients
  

  • 1/2 cup cooked pasta (plain or lightly buttered)
  • 1 hard-boiled egg, peeled and halved
  • 1/4 cup sliced fruit (grapes, berries, or apple slices)
  • 1/4 cup cucumber or carrot sticks
  • 2 tbsp hummus or yogurt dip
  • 2 tbsp shredded cheese or cheese cubes

Equipment

  • 1 lunch box or bento box
  • 1 small saucepan
  • 1 mixing bowl
  • 1 spoon

Method
 

  1. Cook the pasta according to package instructions, then drain and allow it to cool slightly.
  2. Prepare the hard-boiled egg and slice it into halves.
  3. Wash and cut the fruit and vegetables into bite-size pieces.
  4. Arrange the pasta, egg, fruit, and vegetables neatly in the lunch box or bento container.
  5. Add hummus or yogurt dip in a small compartment or container.
  6. Sprinkle in cheese cubes or shredded cheese to complete the lunch.
  7. Seal the lunch box and store in the refrigerator until ready to pack.

Notes

  • You can swap pasta for rice or quinoa.
  • This lunch works well cold or slightly warm.
  • Use an ice pack to keep everything fresh until lunchtime.
