Easy Steak Marinade

This easy steak marinade is quick to prepare, made with simple pantry ingredients, and delivers tender, juicy, and flavorful steak every time. Perfect for grilling, pan-searing, oven, or air fryer cooking.

Ingredients
  

  • 1/4 cup olive oil or avocado oil
  • 3 tbsp soy sauce or Worcestershire sauce
  • 2 tbsp lemon juice or red wine vinegar
  • 1 tbsp brown sugar or honey
  • 3 cloves garlic, minced
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp salt (optional, adjust to taste)
  • 1 tsp fresh rosemary or thyme (optional)
  • 1 to 1/2 pounds steak (flank, sirloin, skirt, or ribeye)

Equipment

  • 1 mixing bowl
  • 1 whisk (or fork)
  • 1 measuring cup
  • 1 zip-top bag or 1 shallow dish
  • 1 grill or 1 heavy skillet
  • 1 Cutting board
  • 1 Sharp knife

Method
 

  1. In a small bowl, whisk together olive oil, soy sauce (or Worcestershire), lemon juice, brown sugar, garlic, pepper, and herbs until well combined.
  2. Place the steak in a large zip-top bag or shallow dish.
  3. Pour the marinade over the steak, ensuring it is evenly coated on all sides.
  4. Seal or cover and refrigerate for at least 30 minutes, ideally 2 to 4 hours for best flavor.
  5. Remove steak from the refrigerator 15 minutes before cooking.
  6. Cook steak using your preferred method (grill, pan-sear, oven, or air fryer) until desired doneness.
  7. Let steak rest for 5 minutes before slicing and serving.

Notes

  • Do not marinate steak longer than 12 hours to avoid mushy texture.
  • For a soy-free option, use coconut aminos.
  • This marinade also works well with chicken or vegetables.
