Bring a large pot of salted water to a boil. Cook the noodles according to package instructions until just al dente. Reserve 1/2 cup of pasta water, then drain.
In a wide pan over low heat, melt the butter gently.
Add the minced garlic and cook for 30 to 60 seconds until fragrant. Do not let the garlic brown.
Add the cooked noodles to the pan and toss to coat in the garlic butter.
Pour in 2 tablespoons of reserved pasta water and toss continuously until the butter forms a smooth, glossy sauce. Add more pasta water if needed.
Season with salt, black pepper, and red chili flakes if using.
Remove from heat and finish with Parmesan cheese and fresh herbs if desired.
Serve immediately while warm.
