Ingredients
  

  • 6 oz noodles (ramen, spaghetti, linguine, or egg noodles)
  • 3 tbsp unsalted butter
  • 4 cloves garlic, finely minced or grated
  • 1/4 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp red chili flakes (optional)
  • 2 to 4 tbsp reserved pasta water
  • 2 tbsp grated Parmesan cheese (optional)
  • 1 tbsp chopped fresh parsley or green onions (optional)

  • 1 wide skillet or pan
  • 1 colander
  • 1 wooden spoon or tongs

Method
 

  1. Bring a large pot of salted water to a boil. Cook the noodles according to package instructions until just al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a wide pan over low heat, melt the butter gently.
  3. Add the minced garlic and cook for 30 to 60 seconds until fragrant. Do not let the garlic brown.
  4. Add the cooked noodles to the pan and toss to coat in the garlic butter.
  5. Pour in 2 tablespoons of reserved pasta water and toss continuously until the butter forms a smooth, glossy sauce. Add more pasta water if needed.
  6. Season with salt, black pepper, and red chili flakes if using.
  7. Remove from heat and finish with Parmesan cheese and fresh herbs if desired.
  8. Serve immediately while warm.

Notes

  • For garlic butter ramen noodles, discard the seasoning packet and follow the same method.
  • Use low heat when cooking garlic to avoid bitterness.
  • Pasta water is essential for preventing oily noodles and creating a silky sauce.
